Blueberry Watermelon Feta Mint Salad

Watermelon Feta Salad
The weather has turned sunny and warm, with summer in the air! I can’t believe that the 4th of July will be here next week! I am thinking about family picnics and what favorite dish I’ll be making, I’ve settled on a delicious Blueberry Watermelon Feta Mint Salad from blogger, She Wears Many Hats! It’s a crowd favorite (that even the kids will like!) with so many different flavors blending perfectly together. 
The recipe serves 8, so you many want to consider doubling or tripling the recipe, if you know there will be a crowd at your picnic! 
Ingredients: 
2 ounces olive oil
1 ounce balsamic vinegar
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1/4 cup finely diced red onion
8 cups diced watermelon
2 cups fresh blueberries
1/4 cup rough chopped fresh mint leaves
1/2 cup crumbled feta cheese
Directions:
In a large bowl, whisk together olive oil, balsamic vinegar, salt, pepper and diced red onion.
Add the diced watermelon, blueberries, mint and feta cheese to bowl. Gently toss to coat.
It’s best to make the salad immediately before serving, just because the watermelon does start to water the other ingredients down, the longer they sit together!
