I have always enjoyed marshmallows, but lately, I really love eating the sweet, soft, puffy delights! I found this marshmallow cookie recipe and thought this is perfect – chocolate AND marshmallows together – yum! The recipe is quite simple and you barely need to bake them, just about 5 minutes and they are done! See below for the recipe, courtsey of NoBiggie Blog by Kami. Thanks Kami!
The Recipe:
Chocolate Marshmallow Cookies
-15 marshmallows (cut into thirds)
-2/3 Cup cocoa powder
-2 Cups flour
-1 teaspoon baking soda
-1 teaspoon salt
-1 Cup sugar (plus 1/2 Cup sugar for rolling)
-1 Cup crisco
-1/2 Cup brown sugar (firmly packed)
-2 unbeaten eggs
-1 teaspoon vanilla
1. Cut marshmallows into thirds (I use scissors), and place in freezer while preparing the cookie dough.
2. Measure and Sift together with a whisk the: flour, cocoa powder, baking soda and salt.
3. In a separate bowl, cream together the: sugar, brown sugar and crisco.
4. Blend into the sugar bowl the 2 unbeaten eggs and vanilla. Beat together well.
5. Stir in the dry ingredients.
6. Roll the dough around each marshmallow third sealing it in a small ball.(This can get messy, so sometimes I wear those thin plastic throw away gloves.)
7. Roll each ball in sugar.
8. Place on a cookie sheet about 1 1/2 inches apart.
9. Bake at 400 for 4 1/2 to 5 minutes, then set out to cool.
That’s it! They bake for such a short time, and it’s better to under cook than over cook them. They freeze really well too. They are a good mix of salty sweet. I hope you try them!

Happy Valentine’s Day! Last night I made a new holiday Valentine recipe, Red Velvet Sheet Cake. It was pretty simple and full of sweetness!
Recipe:
1 box red velvet cake mix
1 3.4 ounce box vanilla instant pudding mix
1/2 cup milk
1/2 cup vegetable oil
1/2 cup sour cream
4 large eggs
1 cup sweetened condensed milk
1/2 cup Nutella
1. Preheat oven to 350 degrees F. and spray a half sheet 13×18 inch baking sheet with non-stick cooking spray. I lined my baking sheet with a silpat liner, the cake can be done with or without it.
2. Place cake mix, pudding mix, milk, oil, sour cream and eggs into mixer and mix until well combined, about 1 1/2 minutes. Transfer batter to prepared baking sheet and spread evenly. Bake for 25-32 minutes, until baked through. Remove from oven and start icing.
3. Place sweetened condensed milk and nutella into a microwave safe dish and heat for 30 seconds, or until smooth when stirred. Drizzle icing over warm cake spreading oven entire cake. Let cool for 20 minutes then cut into squares with a plastic knife.
Makes 24 servings
*Note: I did not have a red velvet cake mix so I used a white cake mix, added some cocoa and when it asked for 1/2 cup milk I added a little bit of apple cider vinegar to make buttermilk. Buttermilk is usually added for red velvet cake. My hubby liked the cake and it was an easy, perfect Valentine Day sweet to whip up! Enjoy baking it!

TGIF! It’s finally Friday and I am going to finally use a new cookbook a friend of mine gave me for Christmas. It’s called The Cookiepedia, Mixing, Baking, and Reinventing the Classics by Tara Striano. I am convinced to buy a book buy the cover and Cookiepedia has an adorable cover! (so I think I am going to like it!) There are so many yummy cookie recipes to choose from, I will share with you on Monday which one I decide to whip up!
